A favorite summer dish in our house is a recipe I adapted from @skinnytaste years ago. It's simple, fresh ingredients and can be served many ways. I've even taken it as a side dish (sans chicken) for a BBQ/potluck as it isn't your "typical" pasta salad. I love the flexibility with ingredients as you can make it more of a pasta or more of a salad - your preference!

Ingredients:
Orzo (cooked al dente according to directions on the box)
Arugula
Sun dried tomatoes (I prefer the julienne cut and NOT in oil, it saves a step having to chop)
Parmesan Cheese (shredded or shaved)
Capers

I tend to just toss everything together - no set measurements and mix up with some olive oil and balsamic! Salt and pepper to taste. If you're feeling fancy, I like to add a balsamic glaze drizzle as a finish on top before serving.**
**Added grilled chicken to this for a pop of protein and to make it a full meal. I prefer to eat it as a chilled pasta salad, while my husband and kids enjoy it warmed up.
